Description
Glucono Delta Lactone (GDL) is widely used as a sequestrant, acidifier, curing, pickling, leavening agent and preservative in food production.
As a stabiliser and coagulant in: tofu, paneer, feta, mozzarella.
As a leavening agent in: baking powder to ferment.
As a gelling agent in: yogurt and cheese to coagulate milk protein.
As a preservative in: milk to keep fresh
